Pumpkin Pie Bites

These are the cutest little personal size pumpkin pie bites. About the size of a small muffin/cupcake, they are a perfect individual portion and take out the need for a pie cutter or forks. They are also super easy to make ahead and transport to a party.

You can make with or without foil liners – I use the liners because it looks kinda pretty with the silver on the platter and it lets people pick them up without getting food on their hands and can even replace plates altogether. I’m making this sound like the laziest dessert ever I just realized!

Pumpkin Pie Bites

Wet Ingredients

1 Can Pumpkin (15 oz)

Evaporated Milk

2 Eggs

3/4 Cup Sugar

1 tsp Vanilla

Dry Ingredients

2/3 Cup Flour

1/4 tsp Baking Soda

1/4 tsp Baking Powder

2 tsp Pumpkin Spice

1/4 tsp Salt

Optional Toppings

Whipped Cream, Ice Cream, Cinnamon

Directions

Preheat the oven to 350F.

Mix the dry ingredients in a bowl. Blend the wet ingredients in separate bowl. Combine.

Grease a muffin pan (I use Baker’s Joy with flour) or use foil liners (I grease those too). The mixture should fill about 12 wells with 1/3 cup or so of batter.

Bake 20 minutes. Allow to cool. Serve or store in the fridge.

You can top with whipped cream, serve with vanilla ice cream or sprinkle with cinnamon! I obviously do all three…
