Lion Fish Ceviche from Chef Matthew Mixon

Waterstone Resort & Marina

Ingredients:

  • 2 medium beefsteak tomatoes seeded and small diced
  • 1 large jalapeno small diced (deseed for less spice)
  • 1 Large red onion small diced
  • 4 sides of medium lionfish skinned and deboned cut into small pieces
  • 1 ripe Florida mango cut into small dices
  • Juice of 12 limes
  • Juice of 3 lemons
  • Juice of 1 orange
  • 1 clove of Finely chopped garlic (Optional)
  • Salt and pepper to taste

In a medium bowl place all ingredients, except for the diced mangos. Mix toughly with a rubber spoon. The citrus juices should cover all ingredients. Place a piece of plastic wrap over the ingredients make sure everything is covered. Place in the refrigerator of at least 4 hours overnight is better. Add mangos to your ceviche and mix. Enjoy with tortilla or plantain chips.
